Welcome to Rosie's Diner! :)
I first came across this recipe while watching the movie "Spanglish" - hence the name. They are also known as: "The Cardiologist of Tomorrow's Paycheck" & "Chunky Monkey". However, once in awhile doesn't hurt and they are SUPER good! :)
Here's what you'll need:
Butter, tomato, lettuce, real mayo (miracle whip doesn't do the trick)
2-3 slices of bacon per sandwich
1 per sandwich: egg, cheese (I used colby jack)
2 slices of bread per sandwich
Heat up the broiler to 350
Cook bacon and let sit on a papertowel to drain
Butter bread & put on tin foil onto broiler, heat on both sides - about 30 seconds (every oven is different, so keep an eye on it)
Cook eggs - I like mine a little more well done, otherwise you get a runny, gooey mess when you cut into it.
Once bread is crispy, add a slice of cheese to one slice and let melt.
Take out bread and add bacon, lettuce, tomato and egg - be sure to add the mayo on one side!
Enjoy!

First Post
Hi! Thanks for checking out my new blog! I've long considered writing a blog about cooking & shows associated with it. But before I get into all that, here's a little about me:
Here's our little family:
That's me, my hubby & our little girl - she's 5.
As far as food goes, my hubby is PuertoRican, so he loves his rice and beans. If it's in a tortilla, he's happy! :)
Our daughter would be satisfied with the following foods everyday if she had her way:
* Ham and cheese sandwiches * Chicken nuggets * Chocolate milk
Like I said, she's 5.
As for me, I have varied tastes in food. My culture is derived of German, Spanish, Greek and Chinese food. My favorite overall would be Italian food though. I enjoy cooking from the heart and making people a meal that brings them together. The food I cook for my family comes from whatever I have on hand, plus those recipes I find online or in magazines.
I also am a HUGE fan of competitive cooking shows. My favorite at the moment is MasterChef Australia! - love it! So, on occasion, I'll give my opinion on the latest episode of any one of these food shows.
Hope you enjoy this blog! :)
